The US Stove Company 81903 Oven Thermostat Assembly regulates an internal cooking temperature by detecting the heat in the cavity and feeding back to the control system to adjust the output of the burner element. It is attached to the interior or rear housing of the oven and is connected to the sensing bulb, control linkage, and gas or electrical control module to measure and report temperature conditions. It assists in keeping the temperature constant and assists in the performance constant in the normal cooking cycles by synchronizing sensed temperature with control responses.
